Moroccan zucchini soup

Pinterest showed me a picture of a very good looking soup.
I tried it and loved it!
The coconut milk and the seasoning go very well together. Few ingredients and it was super easy to make. 
My picture might not be as magazine worthy as the original post but it sure tasted super yummy!

For the people who don't speak Dutch, here's the recipe in English ;-)

Ingredients
- 1 onion
- 1 tsp ras el hanout
- 1 zucchini
- 750 ml chicken stock (I used vegetable stock cuz I'm a vegetarian)
- 50 ml coconut milk

Preparation
Clean the onion and chop finely.

Heat a frying pan over medium heat with a generous teaspoon of (coconut) oil. Fry the onion.

Add the ras el hanout in the last 2 minutes and stir.

Cut the zucchini into small pieces and fry together with the onions.

Pour the chicken broth over the vegetables and bring slowly to a boil.
Reduce the heat when the soup boils and let simmer for 10 minutes.

Remove the pan from the fire and mix the soup with a hand blender until smooth.

Stir in the coconut milk and serve immediately.
